3 Healthy Grilling solutions

So it’s summer time, or what I like to call it “grilling season”.  Try these healthy grilling tips.

1) Chicken breast marinated in rosemary & olive oil. Tinfoil vegetables: dice up potato’s, green, red and yellow peppers and maybe a little onion if you like–season with any variety Mrs. Dash (which is low/no sodium) and spray the inside of the tinfoil with extra virgin olive oil (for flavor and to keep the vegetables from sticking.  You may add pepper to your liking but watch the butters and salt additions.  If you must use a butter I recommend “smart butter”.

2) Grill your catch–Walleye
Prepare tinfoil with olive oil spray.  Season fish with: pepper & oregano. Wrap fish in tinfoil with sliced lemons. Prepare a low/non starch vegetable such as asparagus, broccoli, green beans and wrap this in separate tinfoil–prepared with olive oil spray.

3) Pork skewers & corn in husk–
Load skewers with bite size chunks of pork, pineapple, mushrooms, peppers–green, red, yellow. Corn-in-husk can go right on the grill, top rack recommended.  I usually soak the corn in water for a minimum of 2 hours, overnight is preferred.
